Salwaa Francis Smith is a South African cook best known for her typical Cape Malay cuisine.

A few facts about me!

Born and raised in Surrey Estate, Athlone on the Cape Flats to working class parents. I have 7 siblings and too many extended family members to count.

Married to Aghmad Smith.

Immigrated to the UK, 2001.

We have 4 daughters, 2 sons in law and 8 grandchildren.

Founder of Cape Malay Cooking & Other Delights, a recipe sharing Facebook page, founded in February 2011. 

My social media sites currently attracts an excess of 2.5 million visitors per month.

June 2015 sees the launch of my first self-published hardback cookbook.

August 2015, founded an initiative called Cakes For Kids – free birthday cakes for less privileged children where they donate birthday cakes to mainly children living in care.

October 2016, my first ready mixed spice range launched.

Currently offering Cape Malay Cooking Experiences to tourists visiting our city and who wish to experience life in a typical Cape Malay home on the Cape Flats away from the hustle and bustle of Cape Town City Bowl.

Catering for corporate functions, offer Zoom cooking demonstration as part of team building activities. Offer Zoom cooking lessons to anyone who wants to learn how to cook Cape Malay food.

Self-published cookbook for children launched May 2019.

    slmz left Cape Town a long time ago – I asked before for the Lemon Achar recipe I would appreciate it if you could let me have this recipe many thks

    • Wslm, here is the recipe for lemon achar

      1kg unwaxed thin skin lemons (or 500g lemons & 500g limes)
      1 cup salt

      80 g ready mix atchar masala (If you have access to a spice shop that sells ready mix atchar masala)
      2 – 3 heaped tsp chilli powder (adjust according to your taste)

      or mix your own atchar masala:
      2 tbsp bariship / fennel seeds
      2 tbsp mustard seeds
      1 tbsp methi / fenugreek seeds
      1 tbsp turmeric /borrie powder
      1 tsp chilli powder
      1 – 2 tsps crushed red chillies (dried)
      6 green chillies, slit length wise and deseeded (optional)

      Wash the lemons.
      Cut each lemon or lime into 8 pieces (smaller if you using large lemons). Remove any seeds as you go along. Put the limes in a large bowl, preferably glass bowl.
      Add the salt and toss with the lemons. Cover the bowl with cling wrap and leave for 2 weeks, give the bowl a shake every other day. After 2 weeks the lemons should be soft and slightly discoloured.
      Pour the lemons is a colander, give it a quick rinse under running water. Leave the lemons in the colander for a couple of hours in order for all the water to drain away. Return the lemons to your glass bowl.
      Heat a saucepan and gently heat, stirring all the time, the bariship, mustard and methi seeds take care not to burn. Coarsely grind the spices together in a spice grinder. Add the rest of the spices and mix. Add the spices and the green chillies if using, to the lemons and mix.
      Heat the oil, using a different saucepan, about 10 minutes. Pour the warm oil over the lemons to cover the lemons. Spoon the lemon atchar in sterilised jars. Allow to cool completely before refrigerating. Lemon atchar matures with time so the longer you leave it the better the flavour will be. © Cape Malay Cooking
